After leaving Fort Worth for New York, Hailee trained at the French Culinary Institute and went on to work in some of the city's most respected kitchens, including the Four Seasons Hotel. She learned to move fast, think clearly, and never compromise on quality. But more than anything, she learned to listen—to the seasons, to the ingredients, and eventually, to the people she was cooking for.
During her time in New York, Hailee established Simply Hailee as a private dining and full-service catering company. For years, she served a diverse clientele throughout the tri-state area—from Fortune 500 executives and Emmy and Tony Award-winning artists to everyday families who simply wanted exceptional food in their homes. Each client taught her the same lesson: that personalized service means actually knowing the person, regardless of who they are or what they do.
